Fresh Grilled Raspberry Salmon

I stole this recipe from Oxygen and I can’t wait to make it!  Thought I’d share it with you guys too.

Ingredients:

1.5 lb wild caught salmon filet

1 clove minced garlic

4 T raspberry vinegar

2 T extra virgin olive oil

2 T chopped cilnatro

1/2 T low sodium soy sauce

1 tsp minced ginger

1 tsp sea salt

Directions:

Prepare grill on medium-high heat. Oil slotted or vented grill pan.

Rinse the salmon & pat dry. Set aside in a small baking dish.

Mix together the rest of the ingredients as a marinade & pour over salmon. Cover & refrigerate  for 15 – 30 minutes.

Remove salmon from marinade. Rub the skin with sea salt & place on grill (pan) skin side down. Spoon some of the marinade over the fish and place on grill.

Grill 7 – 10 minutes or until barely done.

Remove from grill & let fish rest 1 – 2 minutes to finish cooking.
